The traditional processing method that they use is called Giling Basah, which involves hulling the parchment off the bean at roughly 50 percent moisture content, versus the 10 to 12 percent moisture level that's common in most other regions. Once grown the farmers use a very unique processing method, which results in the coffee being exceptionally full bodied with a very concentrated flavour. This provides the necessary altitude required to grow speciality coffees. The cultivation of Arabica coffee in this area is possible due to the Lintong region rising to a high plateau. This area lies southwest of Lake Toba, which is known for being one of the world’s deepest inland bodies of water.
The coffee growing region of Lintong takes its name from its home in the district of Lintongnihuta, located in northwest Sumatra.
